This vibrant, savory dish combines tender chicken thighs with the fresh flavors of tomatoes, bell peppers, and oranges. It’s a perfect balance of sweet and savory, ideal for weeknight dinners or special occasions.
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced (red, yellow, or orange)
- 1 orange, sliced into rounds (plus zest of 1 orange)
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Step By Step Method
Step 01.
Preheat your oven to 400°F (200°C).
Step 02.
In a bowl, rub the chicken thighs with olive oil, paprika, cumin, salt, and pepper. Add the orange zest for extra flavor.
Step 03.
Heat a large oven-safe skillet over medium-high heat. Sear the chicken thighs, skin-side down, for about 3-4 minutes or until the skin is golden and crispy. Flip and sear the other side for an additional 3 minutes. Remove chicken and set aside.
Step 04.
In the same skillet, add the garlic, bell pepper slices, and cherry tomatoes. Sauté for 2-3 minutes until the peppers start to soften and the tomatoes release some juice.

Add the orange slices to the skillet and stir to combine. Place the seared chicken thighs back into the skillet, arranging them on top of the vegetables and orange slices.
Step 06.
Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Garnish with fresh parsley or cilantro, and serve hot with a side of rice, crusty bread, or a simple salad.
